Palo Rivera is the owner and operator of Las Esmeraldas restaurant since 1995

Japolinar (Polo) Rivera, owner of Las Esmeraldas is a family man, married with four children, three sons and a daughter, Esmeralda, the namesake of Las Esmeraldas. Polo worked in the restaurant business for eleven years before opening his own restaurant in 1995. He has grown his business from leased space seating 16, to owning his own building with seating for 94 people.

Las Esmeraldas has a persona that is different from other restaurants. From an open kitchen one can see how food is prepared and served to your table. The food is made from fresh ingredients and served fresh every day; nothing is frozen or reheated by microwave.

Polo operates Las Esmeraldas not only as a business, but as a means to serve food to meet his strict standards. He cooks and teaches others to meet those standards. He has a passion to prepare and serve quality food. All of this is done to meet the most important goal: satisfy the customer.
